Oct 2021. Flavor markets, pricing, and trends are strongly influenced by the leading food and beverage manufacturers. Major food companies such as Nestlé, Unilever, PepsiCo, Coca-Cola, Danone, Mondelez, Mars, and Ajinomoto operate globally and exercise considerable purchasing power. Many of these companies limit the number of their suppliers; thus, earning a place on the food processor’s “core list” of suppliers is a critical advantage for a producer of flavor compositions. Suppliers on the core list typically get priority in the development and production of flavors for new or modified food products. Similarly, fragrance markets are strongly influenced by leading cosmetics, toiletries, and fragrance companies as well as major manufacturers of soaps, detergents, and cleaning products. Procter & Gamble, Henkel, L’Oréal, Unilever, Colgate-Palmolive, S. C. Johnson, Clorox, Coty, Natura Cosméticos, Shiseido, and Kao are examples of companies that purchase large volumes of fragrance compositions. These companies are highly attuned to customers' fragrance preferences as well as major retailers' requirements. For example, Walmart, Target, and other retailers have strongly encouraged their suppliers to eliminate certain chemicals (such as diethyl phthalate, a solvent and fixative in some fragrances) from their products and to provide more extensive ingredient disclosure.
